Chicken Pepper pot, Guyana's National dish. Originally came from the Amerindians.
***Extra tasty & full of amazing flavor. A must watch.
This dish develops more flavor left over a period of days. It must be reheated to a boil each day.
6 lbs smoked Chicken
1-2 hot peppers
3 inches of orange or lemon peel.
3 inches of cinnamon stick
8-10 cloves of garlic
2oz of brown sugar
4tbs cassareep
salt & pepper to taste
1 tbs chopped ginger
8-10 stems of thyme
1tbs flour for thickness
water as needed to your likeness
